Though slow-growing and usually smaller than its American relative (a typical adult might weigh five pounds, but they can reach five times that), it’s a stunning fish, with flanks as glitteringly silver as a fresh-run salmon. Highly active and moving in large shoals, sprat are a main food source for predatory fish all along the Irish coast. Forced to the surface in bait balls, then trapped against a beach or breakwater, they often fling themselves out of the water to escape their attackers, sometimes stranding themselves in the process. 056 IRELAND
